Impress your guests with this tasty beef tartare with Snøfrisk® cream.
Here is how you do it
Carefully mix the beef with the beetroot, capers and shallot, and season with salt and pepper. Decorate four plates with a smear of mustard. Shape the tartare into four “doughnuts” and arrange on top of the mustard. Add an egg yolk inside each “doughnut”, and top with radish slices. Whisk the Snøfrisk® to an airy consistency and shape into four small quenelles before placing on top of the tartare. Garnish with fresh herbs and serve.
Tip: Drizzle a little chive oil around the tartare.
