Preheat the oven at 180°C.
Add the flour to a mixing bowl with a pinch of salt. Mix through with clean and dry hands. Gently warm the water and pour it onto the flour. Mix and knead the ingredients until thoroughly blended into a smooth dough. Add more flour if the mixture is soggy and sticks to your fingers, or add a little water if you can see plenty of cracks. The perfect dough should roll easily into a large ball without cracking.
Break fistfuls of dough and roll into balls in your hands. Then pat them down into disc forms. Take the disc and fry in a hot oil - as many as will fit in your pan. You need to give the arepas a crunchy exterior, so don’t turn up the heat too high in case they burn. Once browned, turn the arepas over to cook the other side. The frying process should take no longer than 10 mins. Place the browned arepas on a baking tray at the top of the (now hot) oven for 15-20 mins. You’ll know they’re ready if they sound nice and hollow when tapped with a knife.
To make the Snøfrisk® cream, mix with the zest of one lemon and cracked black pepper to taste. Arrange the arepas with the ham and salad and serve.
