To make the kimchi, you’ll need to prep 3 or 4 days ahead depending on the ambient temperature. A hotter temperature will require less time. Chop the radish, Chinese cabbage, ginger, chilli and spring onions into fine slices and mix together. Place into a container and let it sit in your kitchen for a few days. The lid should just rest on the top of the container so the kimchi can breathe.
Once your kimchi is ready, it is time to make Svele. Svele is a Norwegian batter based cake that bears some resemblance in size and texture to American pancakes. Mix the milk, eggs, sugar and baking soda in a bowl. Add the flour and oil and allow to rest for 20 mins. Use a teflon non-stick pan and fry them until golden brown on both sides using a medium heat. Serve with the kimchi for zing and spice and contrast with creamy Snøfrisk®.
