Salad with mango, avocado and Snøfrisk® cream cheese

Recipe for a colourful salad with lots of delicious fruit and vegetables, including cherry tomatoes, mango, avocado, red onion, baby spinach, rocket, pumpkin seeds, basil and scoops of Snøfrisk® cream cheese. Prepare a simple honey vinaigrette, and serve with bread.

Ingredients

    Salad

  • 12 cherry tomatoes
  • 1 mango
  • 2 avocados
  • 1 red onion
  • 100 g baby spinachgra
  • 100 g rocket
  • 0,5 tub basil
  • 125 g Snøfrisk® Original
  • 100 ml pumpkin seeds
  • 0,25 tsp salt

    Honey Vinaigrette

  • 1 shallot
  • 2 tbsp honey
  • 25 ml white wine vinegar
  • 75 ml olive oil
  • 0,5 tsp salt
  • 0,25 tsp pepper
Here is how you do it

Halve or quarter the tomatoes. Wash and chop the mango and avocados into wedges or slices. If you wish, you can use a scoop to make small mango balls. 

Wash the red onion and cut into thin slices. Use a teaspoon to scoop small “eggs" of Snøfrisk® cheese to add to the salad. Wash and chop the rocket. Toss the rocket with the baby spinach and basil leaves.

To make the Honey vinaigrette, wash and finely chop the shallot. Mix the onion, honey and vinegar. Pour in the oil, initially as drops and then a fine stream. Season with salt and pepper.

Arrange everything on a large dish. Drizzle the dressing over before serving. Finally, mix together the pumpkin seeds and salt and sprinkle over the top. Serve the salad immediately, ideally accompanied by bread.
