Sandwiches with cheese and pesto

    Tomato Pesto

  • 2 tbsp sun-dried tomatoes
  • 125 g Snøfrisk® Wild Garlic
  • 2 tbsp fresh basil
  • 0,25 tsp pepper
  • 1 tbsp olive oil
  • 8 coarse rye bread

    Toppings

  • 2 tomates
  • 1 avocado
  • 4 cured, smoked ham or other cooked meat
  • 8 Jarlsberg® or other cheese
Here is how you do it

To make the tomato pesto, cut the tomato into chunks. Process the cheese, basil, tomato and pepper in a food processor.

Add the olive oil with the motor running, so that all the ingredients are well mixed to give a smooth pesto.

To make the topping, slice the tomato and avocado.

Spread the pesto on all the slices of bread. Add the ham, cheese, tomato and avocado to half of the slices, and top with the remaining slices (pesto side down). Serve.

TIP: If you don’t have time to make your own, you can use ready-made pesto.
